Liven up lunchtime with this Falafel, carrot and baby spinach wrap

Ingredients

  • Artisan Grains Super Greens Falafel Mix
  • 170ml cold water
  • Rapeseed Oil, for frying
  • 130g Tahini
  • 60ml cold water
  • 1 tsp Lemon Juice
  • 1 crushed clove of Garlic
  • 1/2 tsp Salt
  • Large Tortilla Wraps
  • Baby Spinach
  • 1 large Carrot peeled into thin strips

Instructions

  1. Mix the Falafel with 170ml water and let sit for 5 minutes
  2. Meanwhile make your tahini dressing by mixing the tahini, 60ml water, lemon juice, garlic, salt and set aside
  3. Heat the rapeseed oil in a frying pan on medium heat
  4. Using damp hands form the Falafel into small balls and fry until golden
    Drain the excess oil and leave the Falafel on some kitchen towel
  5. Fill the tortilla wraps with baby spinach, strips of peeled carrot, Falafel and tahini dressing
  6. Wrap the tortilla so it’s fully enclosed at both ends
  7. Place on a griddle or in a sandwich press and heat until warm and lightly toasted
  8. Transfer to a chopping board and cut the tortilla in half
  9. Serve warm!
